Cleanable Materials and Finishes

The service zone is stainless or solid surface, because those are what a health inspector expects and what survives citrus and alcohol. Front of house is where wood belongs, fully sealed in a catalyzed finish so it can be wiped rather than absorbing spills. Bar tops take the heaviest wear of any surface in the building: solid surface and stone both work, and a wood bar top is possible but is a maintenance commitment that needs to be understood before it is chosen. Every material decision in the working zone should be made assuming it will be cleaned aggressively, repeatedly, every day.

Restaurant and Bar Cabinetry FAQs

What surfaces are acceptable behind a bar?
Food service regulation generally requires surfaces in preparation and service areas to be smooth, nonabsorbent, and easily cleanable, which in practice means stainless or solid surface in the working zone. Unsealed wood is not appropriate there, though sealed wood works front of house.
Why can't bar millwork have a normal toe kick?
Because the void behind a residential toe kick cannot be cleaned. Commercial millwork is either sealed to the floor so nothing can get underneath, or raised on legs with enough clearance to clean beneath it. Health inspectors look at this specifically.
Do my plans need health department approval?
Frequently yes, and requirements vary by jurisdiction. We would rather build to an approved plan than build first and modify afterwards, so we ask about review requirements at the start of the project.
Can you build around my specific equipment?
Yes, and we need the actual models before building. Under-counter refrigeration, ice machines, and glass washers all differ in dimensions and ventilation requirements, and an opening built to a generic size is a problem you discover on install day.
Can you install without closing the business?
Usually. We build off site and install to an agreed window, typically overnight or during a scheduled closure. That is planned at the start rather than negotiated at the end.
